- 4 chicken steaks total weight 600-650 grams approximately
- 0.5 tsp baking powder
- 3 tbsp cottage cheese plain yoghurt also works
- 1.5 tsp garlic powder
- 0.5 tsp black pepper
- 1 tsp salt to taste
- 1 tsp chilli flakes
- 1.5 tsp smoked paprika
- 1.5 tsp oregano
- 1.5 tsp cumin powder
- 2 tbsp lemon juice
- 2 tbsp extra virgin oil olive oil will also work fine
- fresh coriander, finely chopped for garnish optional
Prepare the Chicken
Pat the chicken breasts dry with paper towels.
If the breasts are thick, slice them horizontally to create thinner steaks for even cooking. I ask my butcher to do this for me.
Season the Chicken
In food processor, add all the remaining ingredients and blitz into a paste.
Rub the marinade evenly over both sides of the chicken and leave it to marinate at least two hours.
Cook the Chicken
Heat olive oil in a large frying pan or griddle over medium-high heat.
Add the chicken steaks and cook for 5-6 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
You could also grill, or air fry the chicken steaks.
