Ingredients
  

  • 4 chicken steaks total weight 600-650 grams approximately
  • 0.5 tsp baking powder
  • 3 tbsp cottage cheese plain yoghurt also works
  • 1.5 tsp garlic powder
  • 0.5 tsp black pepper
  • 1 tsp salt to taste
  • 1 tsp chilli flakes
  • 1.5 tsp smoked paprika
  • 1.5 tsp oregano
  • 1.5 tsp cumin powder
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin oil olive oil will also work fine
  • fresh coriander, finely chopped for garnish optional

Instructions
 

  • Prepare the Chicken
  • Pat the chicken breasts dry with paper towels.
  • If the breasts are thick, slice them horizontally to create thinner steaks for even cooking. I ask my butcher to do this for me.
  • Season the Chicken

  • In food processor, add all the remaining ingredients and blitz into a paste.

  • Rub the marinade evenly over both sides of the chicken and leave it to marinate at least two hours.

Cook the Chicken

  • Heat olive oil in a large frying pan or griddle over medium-high heat.
  • Add the chicken steaks and cook for 5-6 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

  • You could also grill, or air fry the chicken steaks.

Rest and Serve

  • Remove the chicken from the frying pan and let it rest for 3-4 minutes to lock in the juices.
