Ultimate Chicken Pot Pie Recipe: Easy, Homemade, and Delicious Comfort Food

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 tsp garlic, finely chopped
  • 1 tsp ginger, finely chopped
  • 500 grams chicken breast, cut into small pieces
  • 1 tsp salt
  • 1 tsp black pepper
  • 1.5 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 50 grams green peas I use frozen
  • 75 grams sweetcorn I use frozen
  • 50 ml chicken stock you can use water alternatively
  • 100 ml single cream
  • 100 grams grated cheddar cheese
  • 1 roll shortcrust pastry, pre rolled
  • 1 egg, beaten

Instructions
 

  • Heat the oil in a sauce pan, and add the onion and cook until lightly browned at the the edges.
    Then add garlic and ginger and stir through.

  • Add the chicken and spices to the pan and cook through until the chicken has browned. This should take around 5 minutes.

  • Next add the cream, chicken stock and bring to the boil.

  • Once the mixture is bubbling, turn the heat down and add the vegetables and grated cheese. Let it simmer for 5 minutes.

  • Then pour the chicken mixture into your pie dish.

  • Unroll the pastry and place it over the pie dish, use a knife to cut off any over hanging pastry.
    I use a fork to seal the edges of the pie and a knife to to cut 3 slits as air vents in the centre of the pie.

  • The brush your beaten egg over the pastry and bake in the oven on 180C (fan assisted oven) for 15-20 minutes, until golden brown.

    • Vegetarian Option: Replace chicken with mushrooms or tofu.
    • Spicy Twist: Add a dash of cayenne pepper or diced jalapeños for more heat.
    • Herb-Infused: Experiment with rosemary, sage, or parsley for added flavour.
    • Vegetables: You can use any vegetables that you prefer, carrots, cauliflower and potatoes also work great in this recipe.
