Tomato Chutney

A beautiful tomato based chutney which goes with any starter

Ingredients
  

  • 250 grams Tomato Ketchup I like to use Heinz
  • 30-40 grams red onion (just under half an onion) white onion will also work well
  • 40 grams carrot, peeled (or half a carrot)
  • 1 handful fresh mint leaves, roughly chopped no stalks
  • 1 handful fresh coriander, roughly chopped
  • 1 green chillies
  • 1/2 tsp salt
  • 1/4 tsp red chilli powder
  • 1 tbsp vinegar

Instructions
 

  • Put the onion and carrot in a food processor and blitz, I like mine to have a bit of texture so I do not over blitz to a paste texture. Then remove and put into mixing bowl.

  • Then add the coriander, mint, green chillies and 1-2 tablespoons of water to the food processor and blitz to a fine paste. Add the paste to the mixing bowl

  • Then add the ketchup, salt and vinegar to the mixing bowl and mix everything thoroughly together. If you want a runnier texture chutney, add water to your preference.

  • Store in an air tight container until you are ready to serve.
