Spicy Shepherd's Pie Recipe: A Flavourful Twist on the Classic Comfort Food

Ingredients
  

Mince Ingredients

  • 3 tbsp olive oil
  • 600 grams lamb mince
  • 1.5 tsp garlic, finely chopped
  • 1.5 tsp ginger, finely chopped
  • 1 onion, finely chopped I used a red onion, but a white onion will also work
  • 1 tin of chopped tomatoes (400 grams)
  • 1 tsp salt to taste
  • 1 tsp black pepper
  • 1 heaped tsp ground coriander
  • 1 heaped tsp ground cumin
  • 1 heaped tsp paprika
  • 1 tsp onion granules
  • 1 tsp chilli flakes to taste
  • 100 grams frozen peas
  • 1 large carrot, chopped (120 grams approximately)
  • 200 ml water

Mash Ingredients

  • 1.25 kg potatoes, peeled and cut into cubes
  • 0.5 tsp cumin seeds
  • 100 grams unsalted butter
  • 100 ml milk or cream
  • 1 tsp garlic granules
  • 0.5 tsp salt
  • 10 tbsp grated cheese

Instructions
 

Method for mince

  • Heat the oil in a saucepan, add the mince lamb and brown.

  • Then add the garlic and ginger and stir through.

  • Next add the onions, chopped tomatoes, salt, black pepper, ground coriander, ground cumin, paprika, onion powder, chilli flakes, frozen peas, carrot and water to the pan, stir through.

  • Bring everything to boil, then turn the heat down and leave everything to simmer for 15 minutes.
    Mix vegetables through

Method for mash potato

  • Whilst the lamb mixture is simmering, in another large saucepan, fill it with water and bring it to boil. Then add the potatoes and cumin seeds and cook until they are soft.
  • Then drain the water from the potatoes, add them to a bowl, along with the butter, milk, garlic granules, salt and mash it all together. If the mixture is too dry, you can add more milk. You want to be able to easily spread the mashed potato.

Layering the Shepherds Pie

  • Add the mince mixture to a baking tray, spread as evenly as possible.

  • Then spread the mash potato over the top of the mince, use a fork to smooth it out evenly.

  • Then sprinkle over the grated cheddar cheese and bake in the oven at 180C for 20 minutes, or until golden on the top.
