      • Medium: 145°F (63°C)
    • You could also grill the steaks, grill each side until golden brown.
    • Additional oven baking the steaks is an option, I would oven bake at 180C in a fan assisted oven until the steaks are golden brown, this should take 45-60 minutes.
  4. Rest the Steaks
    • Once cooked to your liking, remove the seared lamb steaks from the pan and place them on a plate. Tent with foil and let them rest for 5-10 minutes. Resting allows the juices to redistribute, making your flavourful lamb steak tender and juicy. The resting is really essential to ensure you get a tender lamb steak.

    • Slice your lamb steaks against the grain for maximum tenderness.

  • 0.5 tbsp salt
  • 0.5 tsp black pepper
  • 1 tbsp harissa powder
  • 2 garlic cloves, finely chopped

  • 100ml vegetable stock
  • 1 garlic clove, finely chopped
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 150ml double cream
  • 0.5 tsp coarsely ground black pepper

  • Mix all the lamb steak ingredients together, put in the fridge in an airtight container and marinate for 24 hours.

(Adjust cooking time to your preference. If you prefer a little bit of pinkness in your steak, cook for 4 minutes on each side. If you like your steak very well done, cook for 6 minutes on each side.)
