Ingredients for this Chicken Kebab Recipe
Preparation – 10 minutes
Marination- 2 hours to overnight
Cooking time: 10-15 minutes
Makes 30 kebabs
- 1 kg chicken mince
- 3 tsp garlic, finely minced
- 3 tsp ginger, finely minced
- 1.5 red onion, very finely chopped (you can also use a white onion)
- 2 tsp black pepper
- 3 tsp ground coriander
- 3 tsp ground cumin
- 2 tsp garam masala
- 2 tsp salt (to taste)
- 0.5 tsp turmeric powder
- 0.5 tsp red crushed chilli flakes
- 1 tablespoon of paprika
- Fresh juice of half a lemon
- 4 tbsp of gram flour
- 5-6 green finger chillies, finely chopped (to taste)
- 2 handfuls of fresh coriander, finely chopped (35-45 grams)
- 1 medium potato grated (make sure you squeeze out excess water from the gratings)
Instructions for this Chicken Kebab Recipe

- Add all the ingredients into a bowl and mix thoroughly. Let the mince chicken marinate for as long as possible, ideally overnight. The longer the marination, the better the flavour.

Oven baking instructions
- Use a baking tray, line with foil or baking paper if it isn’t non stick. Wet your hands in cold water (this stops the kebab mixture sticking to your hands), then grab a medium handful of the mince and make a patty shape, add onto a baking tray . (As I use the Scoville baking trays, I don’t need to line the trays. Alternatively you can grease the tray with oil or butter before adding the patties). You can place the patty’s quite close together, as they when the bake, they will shrink slightly. No need to worry about them sticking together.
- Once the baking tray is filled, cook in the oven on 180 C fan assisted heat for 10-12 minutes, until cooked through.

Shallow frying instructions
- The kebabs can be shallow fried. Wet your hands in cold water, then grab a medium handful of the mince and make a patty shape. Add 2 tablespoons of olive oil to a frying pan or griddle pan. Once warm, add the kebab patties. Fry on each side of the kebab for 3-4 minutes.

Instructions for grilled chicken kebabs
- You can also grill the kebabs. Wet your hands in cold water, then grab a medium handful of the mince and make a patty shape. Then add them to the grill, grill on each side of the kebab for 5 minutes.
Air Fryer Instructions
- Spray the kebabs in olive oil, add to the air fryer and cook for 7 minutes on 180C heat, turn over and cook for a further 7 minutes.

- 3 tsp ground cumin powder
- 2 tsp garam masala
- 2 tsp salt to taste
- 0.5 tsp turmeric powder
- 0.5 tsp turmeric powder

- 4 tbsp gram flour
- 5-6 green chillies, finely chopped
- 40 grams fresh coriander, finely chopped 2 handfuls
- 1 medium potato, peeled and grated make sure you squeeze out excess water from the gratings
